After eight years of increasing health issues that remained undiagnosed by traditional medicine, Kim turned to an “alternative” practitioner to discover she had Lyme Disease. She was very sick, most of her major organs were compromised and her brain was ‘a mess’. Part of the recovery strategy was to clean her diet to reduce inflammation.
Many things in our modern diet cause inflammation within our bodies. Inflammation at the site of an injury is good. However, inflammation from other sources is not.
A little research showed Kim a number of foods that would help in her fight against inflammation. These include: beets, blueberries, bok choy, bone broth, broccoli, celery, chia, coconut oil, ginger, leafy greens, pineapple, salmon, turmeric and walnuts.
Having learned that wild blueberries are higher in antioxidants – double that of cultivated blueberries – here’s how Kim planned her inflammation-fighting smoothie …
Using frozen wild blueberries as my base, I looked to my list of anti-inflammatory food fighters to see what would blend in well in my smoothie. I had pure nutrition in mind, but I didn’t want to skimp on taste.

Recipe: Kim’s Anti-Inflammatory Wild Blueberry Smoothie
Serves 2; approx 235 cals each
Ingredients:
- 1 tablespoon Chia seeds
- 1/2 cup unsweetened vanilla Almond Milk
– Soak for 2 hours or overnight. Then add to the other smoothie ingredients in the blender.
- 1 cup frozen Wild Blueberries
- 1/2 ripe Avocado
- 1/4 teaspoon Turmeric
- 1/4 teaspoon ground Cinnamon
- 1/2 cup pure Pineapple Juice
- 1 tablespoon Coconut Oil, melted
- 1/4 cup loosely packed Kale leaves (you may also use baby spinach leaves)
- 1/2 tablespoon Honey
Blend until smooth, adjusting the liquid or adding a little water as required.
Pour into 2 glasses.
